Pumpkin 'Cheese'cake Petites

Ingredients
- Soak cashews in a bowl full of water for 4-6 hours to soften
- Drain cashews and add to a food processor with pumpkin purée, maple syrup, fall spice blend, & dairy free milk and blend until smooth
- Line the baking dish with parchment paper and cover the bottom with the snack mix
- Pour pumpkin "cheese" cake mixture into baking sheet, on top of the Original snack mix
- Place in the freezer for 2 hours, or in the fridge for 6-8
- Remove parchment from baking sheet
- Cut into squares or slices and enjoy!
