No "Hassle" Potatoes

Ingredients
- Pre-heat oven to 425°F
- Scrub potatoes under running water and pat dry
- Cut deep slits in the potatoes, leaving the bottom intact. You can make slits about ⅛” - ¼” but no wider and do not cut through the bottom of the potato ⠀
- Brush the potatoes with a little bit of the olive oil, or fat of choice, and sprinkle with salt and pepper
- Place potatoes in oven safe dish in bottom third of oven and bake for 30 minutes
- Remove from the oven and brush potatoes with remaining olive oil or fat. Try to get in between the layers
- Bake an additional 35-40 minutes until potatoes are crispy on the outside and easily pierced with a fork or paring knife
- Remove from oven and add the cheese
- Toss on Savoureux snack mix ⠀
- Dollop with sour cream, sprinkle with scallions & enjoy immediately. Unlike revenge, this is a dish best served warm, straight from the oven!!⠀
